Add 1 tsp sugar and yeast to the milk and set it aside for 3 - 4 minutes.
In a bowl, whisk the egg whites until stiff and set aside.
In a separate bowl, whisk together the milk mixture, vanilla, egg yolks, butter and remaining sugar, add the flour and salt and mix until a uniform mixture is formed.
Fold in the egg whites gently and cover the bowl with plastic wrap and allow it to rest for about an hour or refrigerate it overnight.
Preheat your waffle maker and brush the inside with butter.
Let the waffles cook until golden brown.
Once ready, serve them with vanilla ice cream, drizzle chocolate sauce and whipped cream at the side (just like I did). Or maple syrup, Nutella, fresh berries, however you would like to have it.
